It’s time to tackle that turkey tradition by planning and prepping our holiday meal, and often the turkey can be the most intimidating. People are looking for new ways to ensure the turkeys they serve to family and friends are not dry and bland.

Meal Kits Canada dug deep into Google Trends data and found that over the past 30 days, searches for “How to cook a turkey” have increased by 233% worldwide. And the results are looking a little less traditional. A lot of home cooks may be trying newer methods of preparing their plump poultry this Thanksgiving.

Spoiler alert: despite new advances in cooking technology and unique kitchen gadgets available to consumers, home cooks still prefer to go the traditional route when cooking a turkey. Regardless, here are some of the top options.

Most Popular Ways To Prepare Turkey

1. Wet-brined

According to Epicurious, brining gives you the juiciest possible bird. Soaking the turkey in this saltwater solution forces the bird to absorb moisture, so much that it weighs more after brining.

Adding citrus fruits, spices, and herbs like rosemary, sage, and thyme to your brining solution can also help boost flavor with minimum effort. You can get creative with your flavor add-ins and adapt them to suit your tastes.

2. Spatchcocked

Spatchcocking the turkey is a method that originated with Mark Bittman, New York Times food writer, in 2002. It has long been used for chicken but has grown in popularity for turnkey preparation. It drastically reduces a turkey’s cooking time by creating more surface area – the meat cooks quickly.  How quickly? Imagine cooking your turkey in half the time!

It can be a little intimidating because it requires removing the backbone and then pressing down and flattening the bird, so it resembles a butterfly. But the bird cooks more evenly and becomes crispier, because you’re exposing all of the skin to the oven’s heat. So you get a juicier turkey in less time, and get more time to watch football on the couch.

3. Smoked

Prefer your turkey sweet, smokey, and tender? Smoked turkey is for you. It does require more time to ensure the meat is cooked and has reached a safe internal temperature, though.

This ‘set it and forget it method’ is very popular because you simply leave the bird alone for a few hours to do its thing. Using aromatic wood, spice rubs, and basting can add flavor to the smoked turkey while it cooks.

4. Dry-brined

Dry brining, also called pre-salting, is an easier alternative to its wet counterpart because it does not require soaking in water. The salt and spices are rubbed directly onto the bird under the skin, then left to rest in the refrigerator for a few hours. The salt pulls the moisture out of the turkey and creates its own brine without adding any liquid.

5. Oven Roasted

Roasting has become less popular lately since it is time-consuming and often results in dry meat. But you can still get a delicious turkey with this method. Oven-roasted turkeys require more prep and basting time. Because there is no moisture, and the heat is consistent, some parts of the bird can cook quicker than others resulting in dry meat if not basted properly throughout the cooking time.

Cynthia from What A Girl Eats says, “Roasting the turkey is the easiest part of the meal. Make sure it’s thoroughly defrosted. Instead of stuffing your bird with dressing, try filling the cavity with lemon wedges and fresh herbs. It will cook faster, and the flavor is amazing.”

6. Deep Fried

Fried turkey is a showstopper and became popular in the 1970s, especially in the South, but it is not for the faint of heart. Deep frying results in a golden bird with crispy skin and juicy meat. Alton Brown of the Food Network recommends soaking it in a mixture of kosher salt and brown sugar for 8 to 16 hours before frying. Compared to other methods, this is one of the quickest ways to cook a turkey.

Some people shy away from frying a turkey because it requires gallons of oil to be heated to 350 degrees Fahrenheit with propane tanks. In America, fire departments respond to at least 1,000 fires caused by deep fat fryers. To ensure a turkey is cooked safely, thaw and dry out the bird thoroughly, if not brining, and be careful!

7. Air Fried

Are you hosting a small Friendsgiving this year? The air fryer may be your answer. Air fryers have become popular since they give you that crispy fried taste without all the oil and in half the time.

According to the NPD Group, air fryer sales have increased by 76% in the last two years. You can easily cook a smaller turkey in an air fryer, but you will have to cut it into pieces to fit it into a conventional air fryer. Covering the turkey in a bold spice rub will add some delicious flavor.

8. Grilled

Try grilling or barbecuing a turkey if you want to really change up the traditional Thanksgiving meal. It provides juicy meat, crispy skin, and a smoky flavor.

According to CNBC, more than $1.8 billion worth of grills, smokers, and stoves were sold between March and May in the United States. Traeger grills reported revenue of $235.6 million in the first three months of 2021, up 107% year over year. Barbecuing and grilling skyrocketed during the pandemic while everyone stayed home, and many people see grilling as a new hobby to invest in.

Andrew Karpiak from Kamloops Living comments, “using my Traeger to cook a turkey not only frees up coveted oven space but also resulted in the best-tasting turkey I have ever had.”

In addition to freeing up space in the oven for other dishes, grilling or barbecuing is a healthy way to cook poultry and requires less fat than other traditional methods. You can stuff the turkey with onions, lemons, oranges, and herbs to bring on that fall flavor. Be sure to use a digital thermometer to ensure your bird cooks to the perfect temperature.

Even though home cooks have many new ways to cook turkey, they still take the traditional route of wet-brining their birds. Whatever method you choose to prepare and cook your turkey this year, don’t take on more than you can handle. Keep it simple and focus on spending time with loved ones.

Indigenous and Black children increasingly experiencing racism, new study shows | CNN

A growing percentage of Indigenous and Black parents in the United States reported that their children have faced racist experiences, according to a study published in the Journal of Osteopathic Medicine.

The study looked at parental reporting of racist experiences their children faced between 2016 and 2020. Data came from the National Survey of Children’s Health, a nationally representative survey directed by groups within the US Department of Health and Human Services.

The researchers, led by Dr. Micah Hartwell at Oklahoma State University College of Osteopathic Medicine at the Cherokee Nation, and Amy Hendrix-Dicken of the University of Oklahoma (Tulsa) School of Community Medicine, concluded there was an increase in reported racial incidents experienced by minority children from roughly 6.7% in 2016 to 9.3% by 2020.

By comparison, 1% of parents of White children reported their kids had faced discrimination in 2016, and that increased to 1.7% in 2020.

Structural racism is taking a toll on children’s mental health

Indigenous children experienced discrimination at rates ranging from 10.8% in 2016 to 15.7% in 2020, and Black children ranging from 9.69% in 2018 to 15.04% in 2020, according to the report.

Hendrix-Dicken says the findings are significant because exposure to discrimination in early childhood can have long-term consequences on health.

“Our study underlines the need for clinicians to expand their anti-racism resources and also highlights the role culturally competent health care can play in lessening the effects of adverse childhood experiences with racism,” said Hendrix-Dicken in a news release.

“As an Indigenous person myself, perhaps the most personally significant and surprising finding is the rate at which Indigenous children are experiencing discrimination,” added Hendrix-Dicken.

In a phone interview with CNN, Hartwell outlined strategies to mitigate the root cause of the findings.

“There is a ton of stuff minority communities have done if that was better represented within our education and childcare and just overall knowledge of coverage, that would provide a more equal context,” Hartwell said.

“Understanding cultural context, historical trauma and providing mental health services from a culturally informed perspective is the best thing the medical community can do,” added Hartwell who is also a Clinical Assistant Professor of Psychiatry and Behavioral Sciences at Oklahoma State University.

Covenant Elenwo, a medical student who worked on the study with Hartwell told CNN, “When looking at some of the historical trauma that has come with being Black and Indigenous, we must understand some of the trauma has not been dealt with even now in 2022.”

The Retained EU Law Bill is a disaster in the making


Trade unionists should recognise what is at risk from the Bill and its sunset clauses.

Tony Burke is president of the Confederation of Shipbuilding and Engineering Unions and co-chair of the Campaign for Trade Union Freedom.

A wide range of employment and health and safety rights derived from EU law were kept after Brexit — but now we must defend these workers’ rights from the promised Tory bonfire of EU legislation.

The Retained EU Law (Revocation and Reform) Bill will scrap over 2,400 pieces of EU legislation currently transposed into UK laws as part of the government’s “Brexit dividend.”

The Bill will, if implemented, wipe out hard-won employment rights that are incorporated into many union agreements and workers’ contracts.

The TUC says the Bill “will cause enormous confusion and chaos for working people and their employers at a particularly difficult time for the economy, and poses a significant threat to workers’ rights. The Bill, if enacted, will sweep away thousands of pieces of legislation and upend decades-worth of case law.”

Ministers faced with the task have so far failed explain which EU laws they expect to retain, amend or which will expire as “sunset clauses.”

The Bill also will also risk a major trade war with the EU, as Britain will breach legal obligations under the Brexit Trade and Co-operation Agreement, adding further hardship to working families already facing massive cost-of-living problems.

Trade unionists should recognise what is at risk from the Bill and its sunset clauses.

The TUC has identified that a range of employment and health and safety rights derived from, or reinforced by, EU law which were largely maintained as retained when Britain left the European Union. Parliament can, however, amend or scrap the measures.

The TUC has identified the following key workers and union rights that could be lost:

– Holiday pay, including the right to average pay for holidays for all workers won by legal action brought by unions

– Equal employment rights for agency workers

– Data protection rights

– Protections of terms and conditions for outsourced workers or when an employer is sold to another company

– The right of workers and unions to consultation when jobs are being outsourced

– Protection of pregnant workers, and rights to maternity and parental leave

– Protection for part-time and fixed-term contact workers

– Rights relating to working time, including the right to paid annual holidays, breaks during shifts, breaks between shifts, maximum weekly working time, and measures to protect night workers and a ban on child labour

– Protection of workers’ rights on the insolvency of their employer

– Rights to a written statement of terms and conditions.

The Tories are spinning that scrapping the Working Time Regulations will allow workers to earn extra money via overtime if they chose to do so. But the fact is that the regulations protect workers from being exploited by bad bosses forcing workers to work long hours under threat of dismissal, or other penalties, if they refuse to work long hours.

The TUC also says the Bill will result in legal confusion. “Where EU-derived legislation is restated by Parliament, previous judgements relating to these instruments will no longer be binding. Issues will have to go through the judicial system again.

“The Bill hands huge powers to, and puts enormous pressure on, the Court of Appeal and Supreme Court which have been instructed to depart from case law informed by EU law if they consider it right to do so.

“There is also a mechanism to allow lower courts or tribunals to make ‘references’ to higher courts or tribunals to enable departure from retained EU case law.”

Unions and the Labour Party now need to prepare to campaign against what the media are saying will be a bonfire of EU laws, the effect of which will be to reduce and eliminate workers’ legal protections.

Over the last two years, U.S. workers have contended with one of the most unusual economic environments in memory.

On one hand, persistent tightness in the labor market has provided greater opportunity and wage growth for many workers. The unemployment rate today sits at just 3.7%, but the economy nonetheless continues to add hundreds of thousands of jobs each month.

In efforts to recruit and retain workers in this environment, many employers have been boosting wages, especially for lower-earning workers.

But the highest levels of inflation in decades have eaten into workers’ gains. Year-over-year increases in the Consumer Price Index have topped 5% for every month since May 2021, peaking at 9.1% in June 2022. And many of the categories where costs have risen fastest are necessities that take up a large portion of household budgets, like shelter and groceries.

To determine the affordable metropolitan areas with the most six-figure jobs, researchers at HowtoHome.com calculated places with the greatest share of employees in occupations where the median wage is over $100,000 and the cost of living is below the national average using data from the U.S. Bureau of Statistics and the U.S. Bureau of Economic Analysis. The data used in this analysis is from the U.S. Bureau of Statistics’ Occupational Employment and Wage Statistics and the U.S. Bureau of Economic Analysis’ Regional Price Parities.

To determine the affordable metropolitan areas with the most six-figure jobs, researchers at HowtoHome.com calculated a location’s share of employees in occupations where the median wage is over $100,000 and the cost of living is below the national average.

In the event of a tie, the location with the greater total number of employees in occupations where the median wage is over $100,000 was ranked higher. To improve relevance, only metropolitan areas with at least 100,000 residents were included.

F1: Ferrari’s Charles Leclerc hails big step forward as runner-up

ABU DHABI—Ferrari’s Charles Leclerc hailed a big step forward as Formula One championship runner-up on Sunday and hoped to go one better next season.

The Monegasque finished second to Red Bull’s double world champion Max Verstappen in the season-ending Abu Dhabi Grand Prix.

“Considering where we were last year, it’s a really big step forward,” said the 25-year-old, who won three of the season’s 22 races while teammate Carlos Sainz triumphed once.

Ferrari finished as championship runners-up to Red Bull, after ending last year third and without a win. They also drew a blank in 2020, when they were sixth overall.

Ferrari had 12 pole positions this year, the most of any team and 10 more than last season, as well as 16 podium finishes.

Leclerc had been seventh overall in 2021, with Sainz fifth, and this season has been his best yet in Formula One even if Ferrari fans are disappointed the team fell short again.

“I think we improved throughout the end of the season in terms of strategy,” said Leclerc, who won two of the year’s first three races before his title bid fell apart in a mix of mechanical unreliability, driver errors and strategy mistakes.

“We still need to work in terms of race pace, because on Sunday we seem to struggle a bit more. But we’ll push during the winter break in order to catch them back a little.”

Leclerc made a one-stop strategy work on Sunday while Perez pitted twice and was unable to rein in his rival despite an exciting late chase.

“I’m confident that in terms of pace, we will manage to catch Red Bull back next year,” said Leclerc.

Team boss Mattia Binotto said the team had succeeded in getting back to being competitive.

“We can put 2022 behind us knowing that we made a lot of progress and, as from Tuesday, we will start preparing for the new challenge that awaits us in 2023,” he said.
